challenge never tasted so good
Sunday is here, already! I just looked around and here it is! How time flies when you're having fun. This weekend was very fulfilling. I made the time to go to church and had a wonderful time in fellowship with my church family. Now it's back to brass tacks with a new work week and the salt mine grind. But at least we have something to look forward to.
Do you see that line up of salads in this The Pretty Healthy Challenge this week? They look sooooooo, good! I jumped at this recipe because I have a special love for olives, and and even deeper love for black olives. And, i loved them even before I knew they were good for staving off hyperglycemia in diabetes. I can keep on popping olive after olive in my mouth and have to check myself before I empty the bottle (you know what they say about too much of a good thing).
So, for this week's 'healthy' we're making a relatively easy salad using red cabbage, chives, corn, black olives, cucumbers, tomatoes and lentil beans. I can taste it already. Mouthwatering!
And now for the 'pretty'. As Easter is just around the corner, I thought that we can focus the 'pretty' aspect of a traditional Easter element - a cute little basket filled with colorful eggs. As a Christian I know that the true meaning of Easter has nothing to do with pretty Easter egg baskets. In fact, it has everything to do with Jesus Christ dying, then rising from the grave, so that we all can have the gift of salvation and live with Him in heaven.
So, as we partake in upcoming Easter celebrations - and we wear our Easter hats and bonnets, and attend brunches and Tea parties with our friends and family, let's take some time to remember Christ's' sacrifice on the cross, for us.
I hope all of you will be participating in the Pretty Healthy Challenge this week. Who can pass up such a scrumptious-looking salad and a pretty basket filled with an array of colorful eggs? Not you, of course! *Remember that you do not have to copy the image exactly. For the healthy aspect, once it's close enough to the ingredients and it remains healthy, you're good to go. And once the pretty has some of the Easter elements, you're good, too! Ok?
