challenge never tasted so good
I am thinking that at least one of you are able to do better than me in replicating the pics in The Pretty Healthy Challenge - see the gallery of challenge pics and my results here. Why not jump in this week and show us what you got!
I've another simple-enough challenge this week. Some bright, pretty bougainvillea and delicious-looking avocado, lentils and tomatoes on a bed of wholegrain bread. I have to say that I'm looking forward to this challenge because I absolutely love lentil bean stew.
I usually have it over a few days as my main meal as it is a low glycemic peas and it's packed with nutrients. I usually add a generous amount of onions, garlic and celery to the pot. It tastes so good!
But this week I'll be trying it as seen in the challenge photo and can already taste the juicy tomatoes running into the melting avocado and lentils and finally the rich bread supporting all that healthy, flavorful goodness.
Bougainvillea blooms all year in the tropics, so the Caribbean and other equatorial challengers will be able to get a nice pic for the 'pretty' part of the challenge. **NOTE: For those in colder climates, you can substitute bougainvillea for Peonies, Sweet Pea, Tweedia, or any cultivated or wild flowers that are in bloom in April.

Pumpernickel bread, old pics and the cold that beat all colds
It's Friday, ya'll!! How was your week? Did you take time out to rest and do something nice for yourself? This week I was down and out with the cold! Man! It's now at the tail-end (thank God!) and I'm just starting to feel a little more like myself again.
But even with the cold (cough, stuffy nose, runny eyes, headache), I still managed to do my challenge. And I have the pics to prove it.
My bougainvillea seems to have something, or rather, someone, attached to it. Who is she? She's so pretty! That's me in an oldie/goldie pic - I think it's from 2014. I've always loved pretty things and I'm forever taking photos of flowers, trees, birds, and other sundry cute things. This pic was taken when I and other family members had an afternoon out in and around Wild Flower Park, Port of Spain, Trinidad. I think bougainvillea is so gorgeous. Do you?
For the healthy part of the challenge, I used pumpernickel bread. I toasted it in the oven first then piled on all the goodness the challenge required. It tasted really good, too. See that bite?
